Veg Thai Green Curry with Bok Choy

This is a dish cooked in thick coconut gravy. Its a variant of stew. The main ingredient is the green curry paste which enhances the taste.

Veg Thai Green Curry with Bok Choy
Preparation time: 10 minutes
Cooking time: 10 minutes
Serves : 4

  • bunch of bok choy
  • 3 numbers of portobello mushroom
  • 1 potato diced into small
  • 1 tsp light soy sauce
  • 1.5 cups of coconut milk
  • to taste Salt
Green curry paste
  • 1 tbsp chopped ginger
  • 1 tbsp garlic chopped
  • 1 tsp of coriander powder
  • 1/2 tsp of cummin powder
  • 1 onion chopped
  • 2 tbsps lemon juice
  • 1 bunch of coriander leaves
  • 4 deseeded green green chillies

  1. Make a paste from the ingredients mentioned under the green curry paste.
  2. Saute the mushrooms and potato in oil. 
  3. Add the paste to it. Then add the soy sauce. Stir it and add the coconut milk.
  4. When the mixture comes to a boil add the bok choy leaves.
  5. Add salt as required and cook until the leaves are wilted off.
  6. Serve hot with cooked jasmine rice.
